A Taste of Baja: The Chefs of Los Colibris

Guests at Los Colibris Casitas rave time and again about their dining experiences—homemade Mexican breakfasts in the hummingbird garden, tasty picnic lunches at nearby locales, craft cocktails and tapas watching the sunset, catered dinners on your private verandah, and cooking classes complete with margaritas, music, and dancing! Our chefs are our secret sauce. Using fresh and local ingredients from Baja’s land and sea, Chefs Iker and Eleazar craft tempting and tasteful menus to suit every traveler and just happen to be a whole lot of fun—we’re lucky to have them! Here is a snapshot into who they are…..

Chef Eleazar Castro

Eleazar is a graduate of the Euro-America chef school in his home state of Morelos, in south central Mexico. Upon graduation he went to work as a chef at Las Mananitas, one of Mexico’s most internationally renowned and most beloved hotels, justly famous for its outstanding cuisine. He worked there for many years, but, like many of us, once he went on holiday in Baja California Sur he simply could not resist the area’s allure and moved here with his family. He started off in Baja working at the large Cabo resorts of Dreams and Marquis, but his soul was really seeking to get back into the boutique hotel business, and we are so lucky that he accepted our offer of a home at Los Colibris Casitas.

 

Chef Iker Algorri

Beloved Todos Santos Chef Iker Algorri, author of Cooking Adventures in Baja California Sur, can be found cooking with love every day at Los Colibris Casitas. Iker grew up in Mexico City and moved to Baja in 1983 to start a career that took him all over the peninsula. In addition to his 12 years as a federal agent, Iker also worked as a translator for the court (like many Mexico City kids, he was fluent in English by the time he graduated from high school), an official with the Registry of Motor Vehicles, a Mexican ATF agent, and as a Customs officer. He even got a law degree and worked as a lawyer. Eventually he focused on his love of cooking and opened Cafe Brown in Todos Santos—a much loved restaurant that he ran for many years. For the past several years, the team, and the guests (!) at Los Colibris Casitas consider themselves so fortunate to have him doing what he so loves to do!
